We know the effort it takes to produce a quality meal, especially with the kids running in from school and wanting their afternoon snacks- let alone a full-course meal by dinner! But for the busy mompreneur, we’ve compiled four classic recipes with a twist that can be made in a snap!

While some of the recipes below are convenient in their quick cook times, overall, each is easy to make! Out with the go-to spaghetti and meatballs, and in with the fares you can find in the trendy restaurants you try to escape to on Date Night!

Read on below for our spin on the classics served in homes across the country. It just takes a little creativity to make a traditional dish, gourmet. The best part? The kids can help too!

Chicken Quesadillas
Prep Time
: 5 minutes
Cook Time: 5 minutes
• 1 Large tortilla
• ¼ Cup shredded cheddar cheese and/or shredded Monterrey Jack cheese
• ¼ Cup cooked chicken strips, seasoned
• Salt and pepper to taste

Lightly spray large skillet with cooking spray. Place 1 large tortilla in skillet, place on medium-high heat. Sprinkle cheese, chicken, and salt/pepper to exactly one half of tortilla. Let cook 1-2 minutes.

Fold un-garnished tortilla half over to seal the tortilla, forming a crescent shape. Flip tortilla in skillet until brown, ensuring ingredients do not fall out.

Continue to cook each side, flipping and until tortilla appears to be grilled to a golden brown and cheese is melted. Cut crescent in half, creating 2 quesadilla triangles.

Allow 1-2 minutes to cool before serving.
Mac and Cheese
Broccoli & Chicken Mac and Cheese
Prep Time: 20 minutes
Cook Time: 5 minutes
• 6 Oz uncooked elbow macaroni pasta
• 3 Cups prechopped broccoli florets
• 1 Cup cooked chicken strips, seasoned
• 1 Tsp salt
• 1 Tbsp minced garlic
• 1 1/4 Cups milk
• 1 Cup unsalted chicken stock
• 1/4 Cup plus 1 teaspoon all-purpose flour
• 1 ¼ Cups shredded sharp cheddar cheese
• ½ Cup whole wheat breadcrumbs

Preheat broiler to high.

Cook pasta according to package directions. Add broccoli to pan during last 2 minutes of cooking. Drain.
As pasta cooks, place chicken in a large skillet over medium-high heat; sprinkling chicken with ¼ salt.

Cook 4 minutes. Sprinkle with garlic; cook 2 minutes, stirring occasionally.

Combine remaining ¾ teaspoon salt, milk, stock, and flour, stirring with a whisk in a bowl.

Add milk mixture to pan and bring to a boil. Stir frequently and cook 2 minutes until sauce is thick. Add pasta mixture and 2 ounces cheese.

In a large baking dish, place pasta and sprinkle with remaining 3 ounces of cheese lining the top layer. Whole wheat bread crumbs can also be added onto top of dish for baking. Broil 2 minutes or until cheese melts and just begins to brown.

Allow 5 minutes to cool before serving.

Homemade Cheese Pizza with Garlic Crust
Prep Time: 10 minutes
Cook Time: 8 minutes
• 1 Bag of freshly kneaded dough
o Can be found in the Bakery of your local grocer, or by the canister in the refrigerated section!
• 2-3 Tbsp pizza sauce
o Can easily be found by the jar in your local grocery store!
• ¾ Mozzarella cheese
• ¼ Cup olive oil
• ½ Tsp of Italian seasoning
• ¼ Tsp garlic powder
• Any topping(s) of your choice!

Heat oven to 425 degrees.

Roll dough onto lightly sprayed dark pan/cookie sheet, forming a rectangle shape.

Using a spoon, spread desired amount of pizza sauce across dough, leaving the edges clear of sauce for crust. Sprinkle cheese across sauce-covered portion of dough, covering areas aside from your crust.

In a small bowl, combine olive oil, Italian seasoning, and garlic powder. Using a small cooking brush, lightly spread olive oil mixture across dough crust.

Add toppings of your choice- whether it be a veggie pizza with spinach, mushrooms, and peppers, or a meat lovers pizza- just be sure toppings are thoroughly cooked before throwing in for baking! A classic cheese pizza always works as well.

Bake pizza for 8 minutes, and remove from oven once cheese is melted and/or crust appears to be golden brown.

Wait 5 minutes for pizza to cool before cutting and serving. Serves up to 12 square slices, perfect for the kids and leftovers!

Grilled cheese
Three-Cheese Grilled Cheese
Prep Time: 5 minutes
Cook Time: 8 minutes
• 2 Slices of honey wheat bread
• 1 Tsp butter
• 1 Slice Baby Swiss cheese
• 1 Slice Provolone Cheese
• ¼ Cup grated Parmesan Cheese
• 1 Tsp scallions, chopped
• ¼ Onion, sliced
• 1 Slice tomato
• ¼ Tsp oregano
• Salt & Pepper to taste

Butter each side of each slice of bread. Lightly spray small skillet with cooking spray, and put on medium-high heat. Place first slice of bread into the skillet, cooking and flipping until each side is light brown.

Remove first slice of bread once cooked, and place cheese slices, tomato, scallions, onions, and Parmesan onto cooked bread slice. Garnish with salt, pepper, and oregano. Set aside.

Repeat skillet process for the second slice of bread, cooking until light brown. Remove from skillet, topping off the sandwich set aside. Place sandwich as a whole back into your pan, flipping sandwich until cheese is melted and bread is golden brown.

Allow 2-3 minutes to cool before serving.
